Welcome to this 35-week program for the Diploma in Cookery Advanced Level 5 with Internship. We believe you will have a stimulating and enjoyable time whilst studying for this qualification and learn vital practical and theory skills to propel you into your career in the hospitality industry.
Along the way, you will learn how to manage kitchen resources and control workflow and supplies to ensure efficiency and customer satisfaction. – these are important aspects of a successful commercial hospitality operation.
You will learn about aspects of the hospitality industry that will equip you for the modern environment – key issues faced by our industry such as culinary food trends, sustainability, minimizing wastage, Cultural and food regions, menu design and development while matching food with beverages.
There is an emphasis on practical skills that go hand in hand with the theory you will be researching and writing about. These practical lessons are designed to demonstrate some of the key principles which will help you gain an understanding of the topic and see the connection between studying here at The Culinary Collective and the real world of commercial hospitality.

All practical assessments will be completed in person on campus.
You will complete a work-based internship training where learners apply programme-related knowledge and skills to a work role while documenting in a logbook diary.
How will you learn?
This is a blended learning programme meaning that some of your learning will occur on campus and some will occur online. The online learning hours are asynchronous. This means you complete them in your own time. There is no set study time, and learning takes place at different times for students- ākonga enrolled in the programme.
Total learning hours per week are approximately 35 hours. This is made up of 12 hours per week on campus with your tutor and classmates; 8 hours of online learning content; with an additional 15 hour per week of self-directed learning which is also carried out online.
The learning hours include:
- reading, watching, and completing the activities on the online and physical campuses.
- completing assessments.
- Directed and self-directed practicals.
Assessments/Aromatawai
A total of 120 credits are awarded for this Advanced Cookery Strand programme.
There are ten (10) assessments to complete, eleven (11) spread out across the nine (9) modules that make up this course, one (1) assessment will be completed in an industry internship in a commercial kitchen operation of 150 hours attested by the employer.
All assessments will be handed out by your tutor in the classroom. They will provide you with information about completing and submitting them.
Assessments are recorded as follows:
- Achieved – all work/unit has been achieved to the standards set in the assessment and performance criteria.
- Not Achieved – the student/ākonga has yet to complete the relevant work to be awarded the assessment or unit.
Studying at Level 5
A diploma at level 5 qualifies individuals with theoretical and/or technical knowledge and skills within a specific field of work or study.
A graduate of a level 5 diploma is able to:
- demonstrate broad operational or technical and theoretical knowledge within a specific field of work or study
- select and apply a range of solutions to familiar and sometimes unfamiliar problems
- select and apply a range of standard and non-standard processes relevant to the field of work or study
- demonstrate complete self-management of learning and performance within defined contexts
- demonstrate some responsibility for the management of learning and performance of others
